2 cloves of garlic
1/2 shallot
1 spring onion
1/2 lemon
2 tbsp Light soy sauce
2 tsp Msg
1 tsp brown sugar
2-3 tbsp Sweet soy sauce
method

With kitchen towels, pat down your pork belly and get it as dry as you can. Place it skin side up and score a few lines down each belly. Place it on its side (meat side up) and tenderize it lightly with a meat hammer or a similar tool. Place them in the air fryer at 190 degrees Celsius for 18 minutes.
After 18 minutes check the progress of the skin. It should be about to crisp up. Continue to cook in the air fryer for another 12 minutes on the same temp. After a total of 30 minutes the pork skin should be nice and crispy.
Turn your pork belly onto its side (meat side up) and cook for a final 10 minutes. The total air fryer time will be roughly 40 minutes.
Take your pork belly out of the air fryer and chop into pieces. Chop up your garlic, shallots, chilli, and spring onion. In a hot, deep and oiled pan, fry your garlic, shallots, chilli and 1/2 of your spring onion. Give it a stir and then squeeze in the lemon. Add the soy sauce, Msg, salt and brown sugar. Add in your chopped pork belly and stir in the pan for about 5-10 seconds. Finally, add in the sweet soy sauce and toss together. Tun off the heat.
When serving use the remaining 1/2 of the spring onion as dressing.

Notes:
The cooking time of the pork belly will depend on the size of the meat and your air fryer. You may need to cook it for longer or less.
If you can't get hold of sweet soy sauce, use more brown sugar as substitute and keep it on heat longer until the brown sugar has turned into a glaze. You may need to adjust your salt to balance the flavours out.
